Abstract [en]

Beta glucan is present in grain, cereal, mushrooms and sea weeds. Whileeffect of beta glucan on post prandial glycemic response is well established, importance of structure and especially molecular weight are not fully outlined. The objective of the bachelor thesis was to examine the impact of molecular weight of beta glucan on glycemic response in humans. PubMed was the search database; relevant filters and inclusion criteria were appliedaccordingly. Six studies were compared and analyzed in relation to supporting documentation. Four out of six studies pointed in the direction that molecular weight is a key determinant for the effect of beta glucan on blood glucose response; two articles did support the thesis that molecular weight is most important. Findings of the literature study are partially cohesive that molecular weight is the primary determinant for the capacity of beta glucan to reduce post prandial glucose response. The mechanisms in how molecular weight affect function appears not to be completely known.

Betaglukaner återfinns naturligt i spannmål, flingor, svamp och alger. Effekterna av betaglukaner på den postprandiella glukosresponsen är väl studerade. Betydelsen av betaglukanernas struktur är dock inte helt klarlagd, liksom påverkan av molekylvikten. Syftet med kandidatuppsatsen var att undersöka hur molekylvikten hos betaglukaner påverkar den glykemiska responsen hos människor. PubMed användes som databas och sökningen utfördes med tillämpbara filter och inklusionskriterier. Sex studier jämfördes och analyserades i relation till bakgrundslitteratur. Fyra av sex studier visade att molekylvikt är en huvudsaklig faktor för hur effektivt betaglukaner sänker den glykemiska glukosresponsen; två studier kunde inte se ett samband. Resultaten av litteraturstudien är delvis samstämmiga i att molekylvikt är den huvudsakliga faktor som avgör förmågan hos betaglukaner att påverka blodglukosresponsen. Mekanismerna kring hur molekylvikt påverkar funktionen hos betaglukaner är inte helt kända.
